Apple Crumble
This delicious apple crumble is a perfect ending to any meal or can be enjoyed by everyone (especially the kids) as a healthy sweet treat at any time of the day! Simple, easy and tasty!
Ingredients:
10 apples, peeled and sliced
2 peaches, peeled and sliced
2 teaspoons maple syrup
1 teaspoon vanilla extract
3/4 cup whole wheat flour
1 cup plus 2 tablespoons oats
3/4 cups coconut oil
1 teaspoon cinnamon
1 cup coconut sugar
6 tablespoons apple juice
Directions:
Mix the apples and peaches with the vanilla extract and maple syrup and place the cur fruit into a large baking dish.
Mix the flour, oats, cinnamon and coconut sugar in a bowl, then add the coconut oil and apple juice and mix well. Spread this mixture as evenly as possible on top of the sliced fruit.
Bake for about 40 minutes or until the topping is crispy and the fruit is soft on the inside.
Serve warm with some healthy vegan ice cream such as “Happy Cow” vanilla ice cream or any ice cream of your choice.
