Carrots & Potatoes Tots with Roasted Veggies

Here's a yummy alternative to meatballs or nuggets!

Make this homemade carrots & potatoes tots with your kids, have fun and spend quality time with your loved ones in the kitchen.

Ingredients:

2 medium sized carrots

2 potatoes, peeled

1 tsp salt

1 tsp dried oregano (or mixed herbs of preference)

Directions

Place a medium-sized pot on the heat with a steaming basket and add 2 inches of water. Place the potatoes in the pot, cover and cook until soft. Drain and let cool completely.

Preheat oven to 350F. Grate the potatoes and place them in a bowl.

Grate the carrots and add it to the bowl with grated potatoes. Add the salt and dried oregano, then mix well and shape it to small balls.

Place on a baking sheet covered with parchment paper and bake for 20-30 minutes, flipping half way.

Tips: combine them with your favourite veggies and roast them
