Coconut Kale Cookies
1 1/2 cups unsweetened flaked coconut
1/2 cup minced kale (put 2 cups fresh chopped kale in food processor)
1/2 cup sugar
1/2 teaspoon sea salt
1/2 cup coconut oil (or butter cut into chunks)
1 teaspoon vanilla
1 egg plus 1 egg yolk
1 1/2 cups flour
1/2 teaspoon baking powder pine nuts
Preheat oven to 350 degrees. Mix coconut, kale, sugar, and salt in a food processor for about 20 seconds. Add coconut oil and vanilla, and pulse a few times.
Add whole egg and yolk; pulse again until blended. Add flour and baking powder and pulse until combined. Try not to over mix.
Flatten the cookies with a piece of parchment paper on a cookie sheet. Add nuts if desired. Bake for 10 minutes if teaspoon sized; longer for larger cookies.
