Fennel and Celery Crunchy Salad
Here's another great salad recipe that you can either enjoy on its own or use as a side dish!
- ¼ cup nuts
- 1 fennel bulb thinly sliced
- 5 celery stalks thinly sliced
- ½ cup parsley chopped
- Shaved Parmesan Cheese (or Nutritional Yeast)
- 1/4 cup lemon juice freshly squeezed
- 1 TBS oil of your choice
- 1 tsp sea salt
- 1 tsp black pepper
Toast for 5-10 minutes your choice of nuts (pine, peanut, walnut, almond...you choose!)
After washing and slicing the veggies, combine fennel and celery very thinly sliced together and add chopped parsley.
Make sure to coat everything with oil, lemon juice, salt and pepper to taste. If you're going dairy-free mix in as well the the nutritional yeast, otherwise go for shaved parmesan as much as you like!
Add the toasted nuts on top and enjoy :)
P.s you can store in the fridge for 3-4 days (remember to add the shaved parmesan only if you're serving it on the same day)
