Kale Potato Salad

Ingredients

- 1 pound potatoes
- 3 cups curly kale, finely shredded
- 1/2 cup green onions, diced small
- 1/2 TBSP lemon juice
- 1/4 tsp fine sea salt

Dressing

- 1/4 cup grainy mustard
- 2 TBSP olive oil
- 1/2 tsp garlic powder
- 1/4 tsp fine sea salt
- 1/4 tsp black pepper

Directions

Bring a large pot of water (plus 1 teaspoon salt) to a boil. Wash and slice the potatoes lengthwise into quarters. Cook the potatoes to tender, drain and set aside to cool. In a large bowl combine the kale with the lemon juice and salt. Using your hands gently massage together for about 1 minute.

The kale will begin to wilt and turn bright green. Then add in the green onions and set aside. In a small bowl, Whisk together the grainy mustard, olive oil, garlic powder, salt and pepper. Pout the dressing into the bowl with the kale and green onions. Add the potatoes to that bowl also and mix gently to combine well. Serve warm or refrigerate until you're ready to eat.
