Massaged Organic Kale Salad
Follow this easy Curly Kale recipe for a special twist on your regular salad. Perfect as a fresh side dish or lunch. Show some love to your organic curly kale and learn this technique :)
- 1 large bunch of curly kale
- 1/4 cup raw almonds
- 1/2 cup black rice
- 1/2 lemon, juiced
- 1/4 cup extra virgin olive oil
- cheese (optional)
- sea salt, black pepper to taste
1 cup rice should cook in 1 3/4 cups water; scale up or down as needed. After coming to a boil, the rice should simmer, covered, until it absorbs the water.Keep the rice covered, off heat, for 10 minutes after cooking.
Remove the stems (keep them for juicing) and chop the kale into thin ribbons (no need a knife, just tear them apart with your hands).
Massage with lemon juice to soften the leaves and cut the bitterness. Drain any liquid released from the kale.
Combine in a large bowl with the olive oil.
Cut and toast the almonds (or use previously soaked & dehydrated almonds), add along the cheese (or other veggies) to the kale and toss. Season with salt and pepper. Enjoy :)
