Moroccan Carrot Salad

- 6-7 large sweet carrots cut diagonally like in the photo
- 2 cloves garlic, crushed
- 1 tablespoon olive oil
- Juice from 2 lemons
- 1 tablespoon cumin
- 1/4 teaspoon Pink Himalayan Salt
- 1/2 cup parsley, chopped
Cooking the Carrots
Cook the carrots in boiling hot water for about 15-20 minutes until they are almost, but not completely soft. Drain in a colander.
Preparing the Salad
Once the carrots have cooled down, add the olive oil, lemon juice, garlic, parsley, salt, and cumin and mix really well. Transfer into a decorative bowl and enjoy !
