Organic Lemon & Tahini Quinoa Collard Wraps
Try this easy recipe and expand your healthy repertoire :)
Veggies used: collards, lemon, spring onion
Main dish - Serves 1-2
Ingredients
- 2 x collard leaves
- 2-3 TBS cooked quinoa
- 1 tsp hemp seeds
- 2 TBS tahini
- 1/2 tsp sea salt or high mineral salt
- pinch cayenne pepper
- 1/2 lemon juiced
- 1 Eat FRESH spring onion - finely chopped
Method
- lay the collard flat on a chopping board or plate - shiny side down
- take 1 TBS tahini and smudge down the centre of the collard
- mix the rest of the tahini, quinoa, lemon, onion, hemp seeds and seasoning in a bowl
- layer the mixture down the centre of the collard
- fold the collard from one side and then roll into a wrap
looking to add a dip? We recommend coconut yoghurt or salsa - yum!
