Raw Cauliflower Rice with Massaged Curly Kale and Steamed Beetroot
Add this to your own Raw-Vegan recipe list for an easy to digest and packed with good nutrients meal this week: Curly kale (high in fiber) + Cauliflower (high in vitamins) + Beetroot (high in minerals) 🌿
- 1 large bunch of curly kale
- 1/2 cauliflower, chopped
- 1 beetroot
- 1 TBS extra virgin olive
- 1 tsp sea salt
- 1 tsp black pepper
- 1/2 lemon, juiced
Massaged Curly Kale
Remove the stems (keep them for juicing) and chop the kale into thin ribbons (no need a knife, just tear them apart with your hands).Massage with lemon juice to soften the leaves and cut the bitterness. Drain any liquid released from the kale. Combine in a large bowl with the olive oil.
Raw Cauliflower Rice
Simply add chopped cauliflower into a food processor and pulse into tiny, fine cauliflower pieces. This should look like "rice". The pulsing part is very important, pulse for a second a few times, move the cauliflower to the centre if needed. It will take a few minutes if your are not use to this, but it is time well spent :). Add preferred seasoning and herbs.
Peel and chop beetroot and steamed until tender
