Vegetable Chunky Soup

Rainy days? ☔️ Cozy up with this yummy vegetable soup! 🌿 . Non-greasy and deliciously healthy 😉

Ingredients

4 cups vegetable broth
3 cups diced tomatoes
1 sweet onion (diced)
3 celery stalks (chopped)
4 carrots (chopped)
1 sweet potato (peeled and chopped)
1 cup green beans (halved)
1 bell pepper (chopped)
3 cloves garlic (minced)
2 teaspoons parsley
1 bay leaf
Salt and pepper to taste

Directions

Place all ingredients in a big pot or slow cooker.

Cover and turn on high.

Cook for 45 min to 1h, or until the vegetables are soft.
